Marble Chocolate Cake

Actually I intended to make chocolate muffins. But I changed my mind last minute. Will leave the chocolate muffins to next week. Here's the recipe for the Marble Chocolate Cake. Smells and tastes really nice. :)

Ingredients (6 inch round)
116g butter, softened (I use 100g)
116g sugar (I use 100g)
100g eggs, beaten
100g flour
3g baking powder
a pinch of salt
15g milk

For the chocolate swirl:
15g cocoa powder
10g milk

Method
1. Preheat the oven to 170C.
2. Beat butter at medium speed till creamy, add sugar and beat till light and fluffy.
3. Add eggs one small portion at a time, whisk well after each addition.
4. Gently fold in sieved flour, baking powder and salt, in 3 batches, making sure no flour gathers, alternating with 2 batches of milk.
5. Pick up a scoop of the mixture into a separate bowl, gently fold in sieved cocoa powder, then the milk.
6. Place both mixtures alternatively into baking tray, tap gently to release any air bubbles, then use a wooden pick to create swirls in the mixture.
7. Bake at 170C for about 20-25 minutes until the top is golden.

Sesame Crumbs??

I have actually attempted Almond Crisps from e's joie too. I was surfing from blogs to blogs and discover this simple recipe that requires only 1 egg white, 30g fine sugar, 20g self-raising flour. The process of making is really easy, but I have a big problem... I can’t remove the cookies cos they are stuck to the baking pan. When I use baking paper, they are also stuck to the baking paper. In the end, have to scrap them out in tiny pieces and those that stick to the paper are of course wasted. The taste is really good. I substituted almond flakes with white sesame. But too bad, they look more like "crumbs" rather than "crisps" that I can't take any photos. Should call them the "Sesame Crumbs". :p

Milo Muffins

Tried another recipe from Happy Homebaker again. The Milo Double Chocolate Chip Muffins without the chocolate chips.

Something new for me again. It's the first time I'm baking muffins and the first time I'm doing rub-in method. Mine did not taste as good as what I expected. I have actually expected it to taste full of Milo, but it didn't. The looks also haha... dunno why, like rise a bit high. The texture is soft but not moist. I guess omitting the chocolate chips does affect the taste too. So must go and buy chocolate chips next time. Might increase the Milo a bit too. I like a stronger Milo taste. Could be because I'm using a lousy weighing scale?! Many times I just estimate only, haha...

Chocolate Swirl Cheesecake

Mmmm... this cake is simply delicious. Thanks for the wonderful recipe from Happy Homebaker.

I didn't do the swirl so my cake looks like a 3 layer chocolate and cheese cake. One problem for this bake: my cake nearly breaks when I overturn the cake tin onto the cooling rack. Then I realize that there are empty spaces between the cheese and chocolate layer. Seems that I did not spread the mixture nicely before baking. The mixture before baking was quite thick, not sure this was correct or not. Maybe I need to "knock" the cake pan lightly to get rid of the spaces between the layers.

But I'm quite satisfied with the results. Not bad for a first try.

Mango puffs

Yeah... I love mango. Using this cream puff recipe, I substitute the filling with whipping cream and mangoes.

Baking cream puff is a new try for me. I worry that I can't get the right consistency when adding the eggs. Luckily nothing goes wrong. But I didn't expect the puffs to expand until so big during baking and my first batch of puffs are really big, like the size of burgers. :P Picture below is the second batch. I use spoon to scoop and didn't use a piping bag, so all the puffs have different shapes and size. Haha.

I have collected 5 recipes for making cream puffs and wonder which is the best. Will try again next time with other recipes.
